Recipe for Vegan Satay Skewers

Ingredients:

  • 1 block tempeh or seitan, cut into cubes or strips
  • Wooden skewers

  • 1 clove garlic, minced
  • 1 teaspoon grated ginger
  • A pinch of chili flakes or Sriracha sauce (adjust to taste)

Preparation:

  1. Marinate the Tempeh/Seitan:
    • In a bowl, whisk together soy sauce, coconut milk, lime juice, garlic, ginger, turmeric, coriander, and cumin.
    • Add the tempeh or seitan cubes to the marinade, ensuring they are well coated. Marinate for at least 30 minutes, preferably longer for deeper flavor.
  2. Prepare the Peanut Sauce:
    • In a separate bowl, combine peanut butter, warm water, soy sauce, maple syrup, lime juice, garlic, ginger, and chili flakes. Whisk until smooth and creamy. Adjust seasoning and consistency as needed.
  3. Assemble the Skewers:
    • If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
    • Thread the marinated tempeh or seitan onto the skewers.

    • Grill the skewers, turning occasionally, until they are nicely charred and heated through, about 10-15 minutes.
  5. Serve:
